Almond flour chocolate cake

Yay for nut flours! (gmo free of course).

I'm a big fan. Aren't we all? A way to eat cake without feeling too much guilt. I mean, nuts are full of fat, but good fat and you cant go wrong with healthy protein. And nuts are gluten free. So why not make a cake from almond flour, cashew flour or coconut flour? Im forever making healthy snacks with one of these flours. Coconut powerballs, Almond bars, Cashew slabs.

My favorite customer loves my almond flour cakes. In fact, I'm making another one for her daughters birthday this weekend. Rich? yes, moist, very and also quite decadent. Yum. Enjoy!

 

Almond flour buckwheat chocolate cake (paleo friendly!)

6 oz enjoy life chocolate chips 

1/2 cup ghee

4 eggs separated

1/3 cup coconut milk yoghurt

1/3 cup raw honey or agave

1/2 tsp sea salt

1 tsp pure vanilla

3/4 cup almond flour

1/4 cup buckwheat flour

 

Preheat your oven to 350

Place your choc chips and ghee in a glass bowl over a pan of water. Stir until melted. Cool for ten mins.

Separate the eggs. Whisk the whites until peaky and you can no longer tip the cup bowl over without it falling out. Then whisk the yolks.

Place all the dry ingredients in a bowl and whisk until blended.

Add the egg yolks to the dry ingredients, then slowly add the chocolate/ghee, mixing as you go. Add half the egg whites until blended a little, then the rest until fully combined with the mixture.

Butter/ghee your 8" pan and sprinkle a bit of buckwheat in the pan so the cake mix doesnt stick. Pour mix into pan and bake about 25 mins. Middle may be slightly softer than the edges but will firm up after cooled.

I love whipped cream on mine, but feel free to eat as is,  for a yummy treat.
